Italian Style Pork Roast

My first use of fennel pollen! I butterflied a pork roast and spread it with a mixture of chopped rosemary, chopped sage, minced garlic, salt, pepper, and fennel pollen. It was very good but I think next time even more herbs would be good.
This was served with rosemary roasted potatoes, green beans sautéed with garlic, a mixed green salad, and homemade baguettes.
This was a bit of a fancy dinner for a weeknight but a longtime friend was here from Singapore so we needed to celebrate.
