Smoking!

But not hot smoking!

I have had these two pieces of pork belly curing in the refrigerator for almost two weeks. Now it is time to add some smoke. About a year ago, maybe more, Michael Ruhlman issued a challenge to create a BLT completely from scratch. I thought I would give it a try as I had the tomatoes and lettuce growing and could bake a decent loaf of bread. So I read all about curing bacon. Most sources mentioned that bacon is cold smoked. Disappointing Potatoes

20110624-061629.jpg

My potato crop did not do well this year. I got them in the ground late and we had some really weird hot spells followed by gloom overcast days here in SoCal. I will try again next year or maybe in the fall. I planted these about the first of April and they were succumbing to a blight on the leaves so I cut the leaves off a couple of days ago and put them in the trash.  Today I dug them up. Not a great number but I am sure they will taste just fine.

Seeds Sprouting

No pics now but just a note to say that cucumber and butternut squash seeds have sprouted. Need to work on the carrots!

Removed the potato vines today as I think they have blight. I will dig soon and see what they managed to accomplish in spite of the sad vines.

Cut down artichoke plants and left the new sprouts to grow. Should have another crop by fall.

I substitute whole wheat flour and decrease the amount of flour by 1/2 to 1 ounce to make up for the fact that the whole wheat flour tends to absorb more moisture. Sometimes I also add in flax seed meal so I then decrease the flour amount even more.

Here is my recipe:

Not too much to say here as I am completely following the directions of Kate from Living the Frugal Life.
