Garden Update

The sweet potato slips are rooted and now in the ground. I know it is a bit late but we get our best heat in August and September around here so these heat lovers should do well. Hopefully! This is the first time I have planted sweets and it is a fun process that started awhile ago.

I also added some later tomatoes and tomatillos yesterday. I like to see how long I can keep tomatoes going. If I had better winter sun I might be able to get fruit all year long.

Yesterday was also a time to plant out two asparagus plants and fertilize the whole garden.

Summer Fun – a trip to Colorado

I had the opportunity to take a road trip with a friend and her two boys to Colorado. The goal was to have fun, visit my family, and give the boys their first trip out of California.  It was fun to experience the world of travel through little eyes again: playing at rest stops, experiencing a motel, hiking, fishing, and visiting a new place. Oh, the joy of the young!

Here are a few more pictures of the trip:

Ginger Beer

There was a pile of ginger at the farmers’ market last week and I remembered a recipe in Karen Solomon’s book, “Jam it, Pickle it, Cure, it.” And I had limes still on the tree in the backyard.

Take about 2 pounds of ginger (I did not peel it), chop it up,  and put it in a blender with 2 cups of water. Puree it and strain it. Put the solids back in the blender and add another 2 cups of water. Blend and strain again. Juice about 8 to 10 limes and add the juice to the strained liquid. Add 1-2 cups sugar to taste.

This is a very strong tasting liquid but really grows on you and seems to mellow as it sits in the refrigerator. Solomon says it will last refrigerated for 3 weeks but it is almost half gone after just one day around here.

We added bubbly water or iced tea to the ginger beer and have been drinking it up. My research says that ginger is very good for you. So enjoy and stay healthy.

Another note about the above blender in the picture. That was a wedding gift 27 years ago and is starting to show and sound its age. So sad that we may have to replace it! I will look into repairing it as I am sure a new one will not last 27 years.

Dragonfly

As I was watering this afternoon my attention was diverted by this wonderful red creature. It stayed around for quite awhile. It liked the top of this tomato stake and the top of my tomato cages. Maybe its color is to encourage all of those green tomatoes to turn red!

I am not really sure what type of dragonfly it is. I tried various methods of identification but am still not completely sure. I think it might be a neon skimmer. I am in Southern California and found one other picture taken of a red dragonfly and it said it was taken at the Huntington Gardens but did not identify it by name.

Pickled Beets

Ready to slap on the lids and ring and make a trip into the water bath canner. I picked the beets this morning and this afternoon have made 3 pints of pickled beets. I made a solution with 1 1/2 cups of vinegar, 1/2 cup water, and 1/2 cup of sugar. I added a tablespoon of pickling spice, 2 allspice berries, three cloves, and one cinnamon stick to each sterilized jar. Then, I packed the beets into the jar and poured on the vinegar solution. The jars then went into the canner and as soon as it came to a boil the jars the timer was set for 30 minutes. Now that they have come out of the canner I can smell the lovely aroma of the beets and their spices.
